Beetroot cooler - a cooling soup made from beetroot kefir with cucumbers and herbs. To make the dish hearty, we add a boiled egg and jacket potatoes in their skins to the refrigerator. This is perhaps the fastest soup in the world, because it will take no more than 10 minutes to cook it if the vegetables are ready. Nowadays, you don’t even need to spend money on cooking vegetables - in the store there is always a large selection of beets, potatoes and even boiled eggs packed for us in a vacuum, someone has already prepared for us.
In general, for hot summer days, the best choice is a cold store, it's a cold beetroot or okroshka with beets. There are different recipes for this simple dish. A refrigerator can be prepared on water, on kvass, in my opinion, it is most delicious to choose kefir as the base, and bold. I like to season the soup with sour cream, and 6% kefir will completely replace it, the consistency of the refrigerator will turn out to be tender and creamy.
Another important point: at the beginning of summer, cook this dish with young beets - it is sweet, it turns out incredibly tasty and healthy!

Ingredients for Beet Fridge
- 2 beets baked in the oven;
- 4 fresh cucumbers;
- 1 bunch of green onions;
- 1 liter of fatty kefir;
- 4 hard-boiled eggs;
- 4 boiled potatoes (in uniform);
- dill, salt, black pepper, crushed ice.
A method of preparing a beet cooler
Carefully wash the beets, wrap in parchment, then in several layers of foil. Bake in a cabinet oven preheated to 200 degrees for about 30-45 minutes, depending on the size of the root crops.
To cook vegetables in their skins, using the oven is desirable, but not necessary. Baked vegetables have a richer taste, unlike boiled vegetables. You can cook beets and potatoes in the microwave or just cook.
Fresh cucumbers shred in thin stripes. If the peel of the cucumbers is bitter, then it is better to cut it so as not to spoil the taste of the beetroot cold.
We peel the beets, shred thinly, just like cucumbers. Mix the chopped vegetables in a saucepan or deep bowl.
Finely chop a bunch of green onions, add to the chopped vegetables.
Now we salt all the ingredients, mix, so that the juice stands out, which will color our beetroot in an amazing pink color.
Then we pour fat yogurt, it’s tastier, but if you are on a diet, then, of course, it’s better to cook a skewer from low-fat dairy products.
Grind several ice cubes in a blender, pour ice crumbs into a bowl and mix the ingredients thoroughly. Be careful with ice, you do not need to add a lot, in the heat it is easy to catch a sore throat!
Pour a portion of beetroot into the plate. Add the hard-boiled egg and cut in half the egg, all together with pepper, black pepper.
Sprinkle the potatoes cooked in their skins with finely chopped dill.
We serve a refrigerator on the table and put a plate of hot potatoes sprinkled with dill next to it. Enjoy your meal!
