Fritters with young nettles
What is a good basic recipe for kefir pancakes? The fact that you can cook them with a variety of additives, each time getting a new taste. You can add berries, fruit slices, and even greens to the dough. Let's cook spring-summer pancakes with nettles and young herbs. The pancakes are really springy, beautiful and healthy. If some of your households do not like greens - in ruddy pancakes with a cup of fragrant tea, the gifts of spring will go with a bang!
Why cook nettles when there is so much “cultivated” greenery? And then, that “thorn-thorn” in nutritional value is ahead of many of these garden crops.
Nettle with low calorie content contains the entire set of substances necessary for the body: proteins, carbohydrates and fats. It contains such valuable substances as volatile and fiber, as well as flavonoids - compounds that are produced only by plants and are vital for the normal functioning of the body. Flavonoids act as antioxidants, are responsible for the strength and elasticity of blood vessels, and possibly help to stay young longer.
In addition, nettle is rich in micro and macro elements, a variety of vitamins. The content of ascorbic acid in it is higher than in lemon - so eat nettles, and your immunity will be on top. Vitamin A will give vigilant vision. A friendly group of vitamins B normalizes metabolism. But with vitamin K, you should be careful - it has the ability to enhance blood coagulation.
In total, there are several dozen species of nettles, but only the most common ones are suitable for food: dioica nettle and stinging nettle. The first is characterized by higher growth - up to 1-1.5 m, the second - lower, up to 60 cm, but it stings harder, for which it got its name. But do not be afraid of insidious villi - cloth gloves will protect them from them during the collection process, and so that the nettles do not sting their hands during cooking, greens should be rinsed with boiling water.
From nettles you can cook many delicious and healthy dishes. Not only fritters, but also omelets, pies with nettles, nettle soups and green borscht. In the village of Krapivna, Tula Region, the Nettle Festival is held every year, where they are treated to all kinds of dishes with nettles: pies and pizzas, sandwiches and even cakes. Fermented nettle is added to salads and even nettle tea is brewed - a very beautiful emerald hue.
And where can city dwellers find young, moreover ecologically clean nettle for culinary delights? You can’t buy it in the market like other herbs - the same parsley, spinach or celery. Imagine how surprised the seller of greens is if you ask for a bunch of young nettles! Therefore, we will mine it on our own.
If you have a summer cottage - excellent! Under the fences in the village it is quite possible to find fresh nettle thickets - clean, away from highways and busy roads.
Well, if you, not knowing that nettle is not a harmful weed, but a tasty plant, have already weeded it all, or you don’t have a garden? Then we go to the forest or to the river bank. Nettle loves moist, shady places, so it grows wildly in a moist undergrowth, in ravines, along the banks of rivers and streams.
After making sure that everything around is clean, we put on garden gloves so as not to burn our hands on the prickly emerald beauty, and tear off the greens. Just don’t need to take out the whole plant with the root: for use in culinary purposes, only the tops of the nettle are suitable - rosettes from the first 4 leaves. Nettle tops can be collected from the beginning of spring and all summer.
If you notice dandelions nearby - excellent, you can add young leaves of these solar plants to our pancakes. Fragrant dill and fresh parsley will perfectly fit the company. If you make a snack, unsweetened version of pancakes - you can put green onion feathers, take less sugar, and a little more salt. In the sweet pancakes that you plan to eat not with the first dish instead of bread, but with tea, jam and honey, put more sugar, less salt, and do not add onions - only nettle, dill and parsley.
Ingredients for Nettle Fritters
- 3 eggs;
- 0.5 l of kefir;
- 1 tsp baking soda;
- 1-2 tbsp.sahara;
- 1/4 - 1/3 tsp salts;
- About 1.5 cups flour;
- A bunch of nettles (100-150 g);
- A bunch of young herbs (parsley, dill);
- Sunflower oil.
Cooking fritters with young nettles
First, prepare the greens. Dip it in a bowl of cold water so that the dust and particles of soil from the leaves get wet and sink to the bottom. After 5-7 minutes, carefully remove the greens from the bowl and rinse in a colander with running water. Nettle can be scalded with boiling water so as not to “bite”. And if you have the courage, you can already chop it - in small doses it is even useful when the nettle stings (of course, if there is no allergy). Then put the greens on a towel or napkin to dry a little, and proceed to prepare the dough.
We mix the eggs with sugar: you can beat with a mixer, and if you want to quickly, shake with a whisk or even just a spoon: the pancakes are not as capricious in this regard as a biscuit.
Pour kefir into whipped eggs. Pour a teaspoon without top of soda and mix thoroughly. You do not need to extinguish with vinegar: soda reacts with a fermented milk product, and the fritters turn out to be lush - you see how many bubbles appear in the dough?
Now add 1 cup of flour to the dough - better sifted, to make the dough more airy.
Finely chop the greens.
Mix, sift a little more (about 1/4 cup) flour into the dough and add chopped greens.
Mix the dough again until smooth. If liquid, you can add more flour to the desired consistency.
We well heat the sunflower oil and pour the dough with a spoon into a hot pan of dough, forming round pancakes.
We fry on medium heat until bubbles appear on the dough on top and a brown crust on the bottom. Then turn over with a spatula. When the pancakes are fried on the other side, remove them on a paper towel to absorb oil.
We shift the pancakes with nettles on a plate and serve warm with sour cream, jam or honey. Enjoy your meal!
